Chef Christophe Paucod, a son of a Lyonnese father and mother from Normandy, has spent his life dedicating his craft of cooking to promoting authentic Lyonnese fare. Chef Christophe honed his skills in the kitchen as an apprentice to Chef Gilles Tournadre, working in the two-Michelin-starred restaurant Gill, as well as numerous appointments at Hotel Deauville in Normandy, The Hotel Plaza Athénée, Chef for the French Ministry of Culture, Restaurant Prunier and Toutone Restaurant in Paris.  

At 25 years old, Chef Christophe joined the ranks of Le Cordon Blue Tokyo as a culinary instructor, and at only 27 years old, he headed the culinary team at Sofitel Tokyo, and became the Director of Food & Beverage and Executive Chef of the AccorHotels Group in Japan.  

Inspired to serve the food of his region and homeland, Chef Christophe established Lugdunum, an authentic “Bouchon Lyonnais” in September 2007, in the historic district of Kagurazaka in Japan. As a high quality Bouchon Lyonnais dining establishment, Lugdunum proudly bears its one-Michelin star, an accolade which it has consistently earned since 2011.
